Harvest & Vinification
The grapes are harvested at night mid-September. Short maceration to avoid oxidation and for fast color stabilization. Cold settling, fermentation at controlled temperature (16/18°C) to preserve freshness.
Tasting Notes
Elegant light pink robe with dark purple reflections. In the nose, flavors of white peach and citrus notes (orange blossom).
In the mouth, fresh and soft attack. Very nice and subtle combination of litchi, citrus and rose aromas. The final reveal a touch of menthol and butter hint.

Service temperature 10-12°C.
This Sainte-Victoire wine will pair perfectly with fishes like grilled sea-bream, but also with the Mediterranean or exotic dishes.
