Typology of the Terrain
The terrain on which the vineyards lay on have medium texture characteristics with predominantly clay-limestone; they are located at an altitude of between 200 and 260 meters above sea level with east / south-east exposure.

The grape Harvest
The harvest took place during the second half of September
Harvesting is strictly manual in small boxes of 12 kg each.
The grapes are carefully selected by hand and the process takes place on a long sorting table.
The grapes drop into conical shaped oak casks: without temperature control or the addition of selected yeasts. The must concludes the fermentation and remains macerating on the skins for approximately one month.

The wine evolves on its fine lees for 12 months in small sized tonneaux barrels of French oak. They are left to mature in the bottle for 6 months.
Medium intense ruby red colour, very clear tending towards transparent. A bouquet with delicate floral aromas of gorse and rose, raspberry, blackberry and black cherry to which are added surprising spicy notes of star anise and ginger towards the end. The delicate flavour is astonishing for the enveloping softness, a moderate freshness and veiled tannins that, overall, make it pleasantly balanced. The final sensory picture is completed with the much appreciated menthol notes.
