Amarone Classico della Valpoicella DOCG is made using the traditional appassimento method, a natural drying process of Corvina, Rondinella and Corvinone grapes, and long barrel aging, giving it a unique and immediately recognizable taste. It represents the full expression of the Veronese tradition and the more than century-old family heritage.
Ruby red color with garnet reflections. The impact of preserved cherry, spices, and dried rose petal lend complexity and elegance to the nose. To the palate, it has warmth and subtlety, well-structured and with a high alcohol content, balanced by velvety tannins and an elegant acidity and freshness.
Harvest, Vinification and Aging
The Amarone is produced with select grapes from the Valpolicella hills, hand harvested and laid over bamboo mats inside rooms with well-circulated natural air for four to five months. Around the middle of January and after reaching the desired sugar content (and reduction of about 25%-30% of weight) the dried grapes are pressed and fermented for 25-30 days at controlled temperature with daily pump-over, followed by a three-year period of fining in large oak barrels where the malolactic fermentation is also carried out. Nearly five years after the initial harvesting, the wine is bottled for a further six months for a final refinement.
