How to pair Cheese & Wine!

Is there anything better than cheese and wine nights? To me, there truly isn't....
However; with the amount of love and energy that goes into making both cheese and wine, it's important to be conscious of how we pair the two so to showcase them in their best light.

Sparkling Wine (Cava, Champagne, Lambrusco, Prosecco)
Probably the easiest wine to pair with cheese.
Anything Fresh, Salty or Sour. e.g. Fetta, Paneer, Chevre make an excellent pairing.
Delicate and nutty cheeses such as Brie, Comté, Gruyere, Havarti, Ricotta, Mozzerella and Swiss also pair well with Sparkling wine.
Strong and Firm cheeses e.g Asiago, Chedder, Smoked Gouda, Halloumi, Manchego, Parmesan and Pecorino will pair
Pungent Cheeses e.g. Blue Cheese, Gorgonzola, Roquefort, Stilton, Taleggio will pair
Light White Wine (Albarino, Gruner Veltliner, Muscadet, Pinot Gris/Grigio, Sauvignon Blanc, Soave, Vermentino)
Best to stick with Fresh, Salty and Sour Cheeses and the Delicate and Nutty Cheeses
Full-Bodied White Wine (Chardonnay, Marsanne Blends, Semillon, Viognier)
Best with Delicate & Nutty and the Strong and Firm Cheeses
Aromatic White Wine (Chenin Blanc, Gewurztraminer, Riesling, Torrontes)
Pair with Fresh, Salty and Sour Cheeses best.
Can also be paired with Delicate and Nutty and Pungent Cheeses.
Rosé
Pairs best with the Delicate and Nutty Cheeses
Can also be paired with the other three styles of cheese.
Light Red Wine (Gamay, Pinot Noir)
Pairs best with Delicate and Nutty Cheeses but can also pair with the Fresh, Salty and Sour cheeses
Medium Red Wine (Barbera, Sangiovese, Carmenere, Grenache, Merlot, Valpolicella, Montepulciano, Rhone blends, Primitivo)
Pairs best with Strong and Firm Cheeses. Can also pair with Delicate and Nutty and Pungent cheeses.
Full-Bodied Red Wine (Aglianico, Bordeaux, Cab Sauv, Malbec, Nebbiolo, Pinotage, Nero d'Avola, Negroamaro, Syrah, Petit Verdot)
Pairs best with Strong and Firm cheeses and Pungent cheeses
Dessert Wine (Madeira, Marsala, Port, Sherry, Sauternais, Vin Santo)
Pairs best with Delicate and Nutty and Pungent Cheeses.
